A top fermented German beer originating in the late 1800s, it is a refreshing, clean and a subtle balance of fruitiness and malt.  Produced in Köln ( Cologne) and traditionally served in 20cl Stange glasses, the style is a protected appellation as per the Kölsch convention of 1986.  There are multiple Kölsch style beers available in North America.

The beer is clear, sort of a light gold colour and the head is fragile and fleeting.  Aroma should be of a low and subtle grainy sweet malt along with some delicate pome fruit. Apple and pear should be apparent.  Hops are sometimes noticeable but will be low and of the classic continental qualities of floral or herbal.  Usually medium-light in body with decent carbonation and smooth feel.  Flavour should display the same subtle and delicate balance of malt and fruit.  An impression of mild sweetness despite high attenuation, should be balanced by medium bitterness. Hops are low and floral or herbal, and the finish is dry and a touch crisp, not sweet, and a bit soft.
