A low alcohol Abbey beer that is generally reserved for consumption by the monks although it does become available for purchase from time to time.  The modern interpretation seems to have been developed by Westvleteren in the late 1990s.  Chimay Gold is a good example and has been available for purchase in Ontario.  This beer is quite hoppy.

The colour in the glass is pale yellow or gold and the head is a big pillowy cloud that sticks.  The forefront of the aroma is going to be a decent level of floral hops, and a lot of yeast character.  Fruity esters in the form of pome fruits, citrus rind, or apricot combined with clove like or black pepper phenols dominate the bouquet.  The malt is there to support only  and is bready or crackery.  Medium bodied but on the lighter end and with a high and biting carbonation.  On the palate an initial malty flavour should hit, but it is light and makes way for the floral hops and fruity, peppery, yeast derived flavours.  Bitterness is high and lasts along with the yeast character into the hoppy dry finish.
